These creamy butter beans in tomato sauce are ready in 10 minutes! Enjoy the beans on their own, or serve them over pasta, potatoes, or grains like rice or couscous. Great for busy weekdays!
⅓cup(80 ml) oat milk barista(you can substitute any other milk of your choice)
1can(15 oz) butter beans/lima beans (or any other white beans, preferably large ones)
Oil
Salt and black pepper
For serving:
Vegan parmesan
Toasted ciabatta(or any other bread)
Instructions
Peel and finely dice onion. Sauté in a medium pan with 1 tablespoon oil until soft and golden, about 3 minutes, stirring often.
Add tomato sauce and oat milk. Drain and rinse beans and add them to the pan. Season with salt and black pepper and heat for 5 minutes.
Serve with grated parmesan and enjoy with some bread or over pasta, potatoes, rice, or couscous.
Notes
Additional Vegetables: Adding 1-2 cloves crushed garlic or sliced mushrooms when sautéing the onion is a great addition. The same goes for leafy greens (chopped spinach, chard, or kale) and fresh herbs like basil and thyme, added towards the end of cooking.
